Easy Freezer Pickles-Another Recipe from Nancy's Kitchen

 
My cucumbers are exploding. I can't eat them ALL fresh so what's a cucumber lover to do?
Freeze them! It's so easy.

Easy Freezer Pickles 1 cup white vinegar ¾ cup water ¾ cup sugar 1 tsp salt
(This enough for one or two freezer containers.) I scale up depending upon how many cukes I have to process.
Add store bought pickle spice (about a tablespoon) to taste.
Wash, peel and slice cucumbers (I use a mandolin to slice evenly and quickly)
Put into clean freezer containers.
Pour the slightly cooled pickling juice (from above) over the cukes, cover/seal, cool and put into the freezer.
They last about 6-8 months in the freezer-probably longer but ours never last that long.
